Taco Tuesday: Leftover Chicken Tacos with Spanish Rice

I can only take credit for throwing together the tacos using leftover shredded chicken from my green chile enchiladas.

Leftover Chicken Tacos



Shredded chicken
Cabbage (shredded)
Shredded cheese
Low – sodium soy sauce
Red pepper flakes
Corn tortillas
Warm shredded chicken in a pan on medium-low heat. Add a splash of soy sauce and a pinch of red pepper flakes.
Heat corn tortillas on the stove or in the microwave (wrapped in a damp paper towel).
Place shredded chicken in tortilla and top with cabbage, shredded cheese, and cilantro.
